20 discs of 75% dark chocolate made using sustainably sourced heirloom cocoa beans of the Chuno variety, grown in Jinotega, northern Nicaragua. Referred to as Esencia, these particular beans have undergone a longer fermentation with less oxygen, before being roasted by us in England to highlight their unique character.
